I'm sure you've seen the baked protein oatmeal trend all over the web this past year.
Super easy, high protein but still sweet if you have a morning sweet tooth.
I like to make mine in snack size portions because I usually eat them as pre-workout fuel.
Feel free to adjust the portion size. Muffin tins will require a little less time in the oven and larger ramekins will require a bit more time.
I am also featuring my favorite collagen in this recipe from Rootz Nutrition and explaining why I like to use it!
Often times, people will choose a protein powder over collagen.
Do you know why? What the difference is?
First we need to start by talking about amino acids. Amino acids are the building blocks of proteins.
Proteins carry out essential fucntions in the body like immune funciton, wound healing, appetite regulation and blood sugar balance. They also transmit messages, regulate our sleep and hormones and play a role in every body process.
Big deal type of stuff!
There are 20 amino acids and they combine randomly to create different proteins within the body, carrying out different functions.
Eleven amino acids are produced within the body system.
The letover nine, are referred to as essential amino acids and must be found in the foods we eat.
Protein powder contains all 9 essential amino acids we need to properly fuel our body.
Most collagen powders only contain 8 essential amino acids, missing tryptophan. (if you are eating a variety of foods, you are easily getting all the amino acids you need so it should never be an issue.)

INGREDIENTS
2 ripe bananas
1 cup oats
3 eggs
3 scoops of protien (~3/4 cup) - I use Rootz Nutrition Vanilla Collagen use code "kl2farms" for 20% off at checkout!
1 cup coconut milk (or milk of your choice)
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 tesapoon vanilla
1/4-1/2 cup chocolate chips
DIRECTIONS
Preheat oven to 350 degrees.
In a food processor or blender, add all ingredients except chocolate chips. Blend until you get a smooth, runny consistency (~30 seconds).
Fold in chocolate chips and pour into greased ramekins.
Top with additional chocolate chips and a banana slice.
Bake for 30 minutes. Enjoy!
NOTES
This recipe makes 3 servings. I prefer to make mine a bit smaller and get 6 servings simply becuase I usually enjoy them as a pre workout snack or a mid day treat. Do what works for you.
As always, banana bread cook time depends on the banana size and dish size. Adjust cook time accordingly.
