Okay, listen up.
Here's the scoop.
Every other day is the day I'm going to throw out my microwave. Goodbye radiation and denatured nutrients.
I've been threatening this since 2018 and still haven't done it. Maybe this will be my year.
Anyway, it's moments like this when all I want is a piece of banana bread that keep me from tossing it out.
You probably don't know this, but Keith HATES (& I mean hates) bananas. With a passion.
So if I'm going to make banana bread, I'm going to be the only one eating it.
& I like banana bread, but it isn't my treat of choice.
Which is where this recipe comes in so handy.
It's like a mug cookie or a mug cake but banana bread.
For those nights when you just want something cozy, sweet and nostalgic.
Now, she isn't the prettiest thing in the world, but she tastes like a dream.

INGREDIENTS
1/2 banana, mashed
1/4 cup almond flour
1 tsp maple syrup
1/4 teaspoon baking soda
1/4 teaspoon vanilla
small pinch of salt
1 tablespoon chocolate chips
DIRECTIONS
In a mixing bowl (or if avoiding extra dirty dishes) a large mug/ramekin, mash the banana until really smooth and fragrant.
Add the almond flour, maple syrup, baking soda, vanilla and salt. Mix thoroughly.
Transfer to serving dish, add chocolate chips.
Microwave on high for 2 minutes. You want to make sure your serving dish is double the height of the dough because this will rise and you don't want it to spill over. Cooking in 30 second increments is a great option too.
Top with a few extra chocolate chips and let cool for 3-5 minutes before serving. Enjoy!
