WELCOME TO DAY 5 OF COCKTAIL WEEK.
This recipe is a super simple one and mostly concentrated around my delicious hot chocolate recipe, but it had to be shared during cocktail week because adding a little Baileys to it is top notch.
As a lot of you know, I really limit my diary intake so this hot chocolate is based around coconut milk and absolutely delicious, thick and creamy.
WHAT YOU WILL NEED
Small pot
Whisk
Mugs
FOR INGREDIENTS
Full fat coconut milk - I like Thai Kitchen
1 1/2 cups water or milk - I love using my vanilla bean coconut milk, any other plant based milk will work too
Vanilla bean paste - blue cattle truck company is my go to
Maple syrup
Cocoa powder - this is the brand I use
Pinch of sea salt
Toppings : shaved chocolate, marshmallows, candy canes, whip cream
Combine all the ingredients in a pot over a low heat and whisk until fully incorporated and cocoa no longer has any clumps. It is okay if it bubbles a little, but don't bring it to a boil. You don't want to burn the cocoa.
Serve and enjoy with all the toppings you wish.

1 (14oz can) full fat coconut milk
1 1/2 cups water or milk - I love using my vanilla bean coconut milk, any other plant based milk will work too
2 teaspoons vanilla bean paste, vanilla is fine too
2 tablespoons maple syrup
2 tablespoons cocoa powder
Pinch of sea salt
2 oz Baileys, per serving
Toppings : shaved chocolate, marshmallows, candy canes, whip cream
DIRECTIONS
Combine all ingredients in a pot over low heat. Mix until there are no longer any clumps and everything is evenly incorporated. Do not boil.
Serve and enjoy with all the toppings you wish.
NOTES
If you want it even more chocolatey, add 1-2 tablespoons of your favorite chocolate. I prefer a true cocoa flavor, but I know some people like their hot chocolate like melted chocolate.
Serving size is up to you. I have polished this off with one friend before and served for 4 people. I recommend adding 1.5-2 ounces of baileys to each mug of hot chocolate.
