Oh man, does this girl love these cookies!
They are chewy, slightly crispy and bathed in sweet coconut.
What could be better.
They remind me of summer, the ocean and happiness.
& let's not forget about the smell.
I get it, coconut isn't everybody's jam but it is this girls.
You'll find there isn't much I don't like. 💁🏼♀️
Food is life.
These are super easy to make and don't need any chill time. Hoorah!
WHAT YOU WILL NEED
Cookie sheet
Parchment paper
Mixing bowl
Kitchenaid or hand mixer
Cookie scoop
FOR INGREDIENTS
Butter, softened (plant or dairy will work for these)
Brown sugar -love wholesome brand
Granulated sugar
Egg - loving happy egg right now
Vanilla - I exclusively use blue cattle truck company
Baking soda
Flour - King Arthur unbleached organic flour for the win
Salt -love terrasoul Himalayan sea salt
Sweetened coconut - THIS is the brand I normally use because it's easily accessible at Walmart
Preheat oven to 350°F. Combine the dry ingredients : baking soda, flour, salt, sweetened coconut.
In the bowl of a Kitchenaid mixer, add butter, sugars, egg and vanilla. Combine until fully incorporated.
On a low speed add the dry ingredients until fully incorporated.
Scoop the cookie dough out with a cookie scoop, roll into balls and roll through more coconut.
Bake for 12-16 minutes. Enjoy!

1 egg
2 teaspoons vanilla
1/2 teaspoon baking soda
1 1/4 cup flour
1/2 teaspoon salt
1 1/2 cups sweetened coconut, + more for rolling in

Preheat oven to 350°F and combine the dry ingredients in a medium mixing bowl: baking soda, flour, salt and sweetened coconut.
In a large mixing bowl (or your Kitchenaid mixer), add butter, sugars, egg and vanilla. Combine until fully incorporated.
On a low speed, add the dry ingredients until fully incorporated.
Scoop the cookie dough out with a cookie scoop, roll into balls and roll through more coconut.
Bake for 12-16 minutes. Enjoy!
NOTES
Often times, I replace sweetened coconut with desiccated coconut. This is not one of those times.
Bake time with these can depend on how long your oven has been on and how hot it gets. Also, I like mine less done (more chewy) so 12 minutes is good for me.
