because it's ultra nourishing and extremely tasty.
I've been told (by my husband 😉) that I make the best chicken noodle soup ever.
Of course he likes me a little bit more than the average Joe, but he is a PICKY man.
Nothing much really rings his bell. It's hard to get more than an "it's good" out of him.
But this one does.
& it is requested (along with my homemade bread) often.
So, I figured it was time to share with you.
INGREDIENTS
2 T olive oil
1/2 medium yellow onion
3 cloves garlic
4 medium-large carrots
4 large stalks celery
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon dried thyme
1 bay leaf
1 teaspoon salt + more to taste
pepper to taste
4 cups chicken broth
4-6 cups water
2 medium chicken breasts
6 ounces egg noodles
DIRECTIONS
Add olive oil to a dutch oven on medium heat. Sauté onion until fragrant. About 5 minutes. Add carrots and celery. Sauté for 3 minutes to soften.
Add garlic, basil, parsley, thyme, salt and pepper and sauté for 60 seconds coating all the vegetables and taking the bite out of the garlic.
Add chicken broth and water, bay leaf and chicken. Bring to a boil. Reduce to a simmer (still bubbling) and cover for 1 hour.
Remove chicken and bring back to a boil. Add noodles for recommended time. (mine take about 12 minutes.)
Shred chicken, place back in dutch oven to warm for a couple minutes.
Serve and enjoy!
NOTES
If you don't have chicken broth, no worries. Just use water + add more salt.
Make sure you simmer the chicken for an hour. It will make it really easy to shred.
Feel free to use a mixer to shred your chicken, but if you have good quality meat and cooked it for the recommended time, it should shred super easy with two forks.
