DATE "SNICKERS"

Oh my good golly.

These are divine.

I've been making these bad boys since 2018 and they have become a favorite of not only mine but my Momma Bears too.

They are chewy, caramely, crunchy, chocolatey and salty in one bite.

The perfect snack.

They taste like a snickers without the list of ingredients that you can't pronounce and have no idea what they are.

& they are incredibly easy to make.

Recently, the internet went wild with variations of them.

Here is mine.


INGREDIENTS

  • 25 medjool dates, pitted

  • 1/2 cup + peanut butter

  • 1/2 cup + peanuts

  • 2 chocolove 55% chocolate bars (~ 6 ounces)

  • 1 tablespoon coconut oil

  • Maldon sea salt


DIRECTIONS

  1. Slice each date lengthwise, making sure not to cut all the way through and remove the pit.

  2. Fill each date with about 1/2-1 teaspoon of peanut butter depending on the size. Press about 4 peanuts into the peanut butter and place in the freezer for about 30 minutes to stiffen up.

  3. Just before you take the dates out of the freezer, melt the chocolate + coconut oil (choose your method, I usually just use the microwave for this recipe). Toss the date + peanut butter combo through the chocolate using a spoon to make sure it all gets coated. Remove using a fork so the excess can drip away. Sprinkle with Maldon salt before the chocolate sets.

  4. Freeze again for 30 minutes to harden the chocolate.

  5. Enjoy!! These store well in a glass container in the fridge for up to 2 weeks. (or 2 months in the freezer.)
