Serve it with a side of mashed potatoes and a side salad and you have impressed the whole neighborhood, the PTA, your in-laws and Gordon Ramsay.

INGREDIENTS
2# chicken thighs (about 4-5)
salt and pepper to taste
for the sauce
3 tablespoons olive oil
1 1/2 tablespoons whole grain dijon mustard
1 tablespoon dijon mustard
2-3 tablespoons honey
pinch of crushed red pepper
6 cloves garlic, minced
DIRECTIONS
Preheat oven to 425°F.
Place the chicken thighs in a baking dish and season them generously with salt and pepper.
Whisk all the sauce ingredients together in a bowl (olive oil, whole grain and regular dijon mustard, honey, crushed red pepper and garlic.) Pour over chicken thighs and use your hands or a pastry brush to coat evenly.
Bake for 40-45 minutes until skin is crispy and golden brown.
Let rest for 5 minutes, serve and enjoy!
NOTES
I like to remove my chicken from the oven at least once and baste it with the sauce in the bottom of the pan. This allows that skin to get nice and golden brown and crispy.
Topping with parsley adds a nice serving touch and a delicious fresh element.
We like to pair ours with bone broth rice (rice booked in chicken bone broth) and a steamed vegetable. Mashed potatoes and a side salad are also a nice choice.
