I have been swooning over this salad recipe for a few months now and figured it was time to finally share it with the world.
It is the perfect meal salad. + GREAT for meal prep! Hello quick & nutritious lunches!
It hits all the elements for a balanced meal meaning your blood sugars will thank you.
It contains fiber, *nutritions* carbohydrates, protein and healthy fats.
It really is just a slam dunk.

INGREDIENTS
spring mix
chicken, cooked and shredded
quinoa, cooked
optionals
feta
red onion
pepperoncini peppers
cucumber
olives
tomatoes
for dressing
1/2 cup extra virgin olive oil
scant 1/3 cup white wine vinegar
juice from half a lemon (~1 tablespoon)
1 teaspoon basil
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon dijon mustard
2 cloves garlic, minced
DIRECTIONS
Bring a large pot of water to a boil. Add chicken, reduce to a simmer and cook for 25 minutes with lid on.
Prepare your quinoa. 1 cup quinoa to 1 3/4 cups water. Add quinoa and water to a pot, bring to a boil reduce to a simmer and cook for 15 minutes. After 15 minutes, remove from heat and let sit for 10 minutes before fluffing with a fork.
While your chicken and quinoa are cooking, prepare your salad dressing. Add all ingredients to a ball jar, top with a lid and shake. Refrigerate until ready to use. Next, prepare your salad toppers - the optionals of your choice.
Once the chicken is done, add it to a mixer with 1-2 teaspoons of olive oil, a couple pinches of salt and a pinch of black pepper. Shred the chicken using a mixer.
Assemble the salad. I like to slice my spring mix into smaller pieces. Add quinoa, chicken and toppers of your choice. Dress with salad dressing.
Serve and enjoy!
NOTES
For one person, I like to use about 2 1/2 - 3 cups spring mix, 1/2 cup quinoa, 1/3 chicken breast.
Doubling this dressing recipe is a top notch idea. Perfect to have in the fridge throughout the week. Will keep for 10 days.
This is the best meal prep salad. Make a bunch so you have lunches throughout the week. Get tired of a salad, combine it all and toss it in a wrap!
