KEY LIME PIE OVERNIGHT OATS

Man oh man are you in for a treat today!

Holy heck and bob are these fantiddlyastic.


Easy, delicious, and nutritionally dense.

These guys are packed full of flavor and healthy ingredients.


I recommend batch making them as they go fast.

Great for breakfast, as a snack and on the go.

Add a little protein powder to make it a post workout option.

INGREDIENTS

  • 1/2 cup oats

  • 3/4 cup milk, I use my vanilla bean coconut milk recipe

  • 1 tablespoon fresh lime juice

  • 1 tablespoon chia seeds

  • 1/4 cup yogurt - I use a coconut based one (culina or cocoyo brand), but greek would be good too

  • lime zest, from about 1/4 of a lime

  • 1 teaspoon maple syrup (+ to desired sweetness)


DIRECTIONS

  1. Zest and juice the lime. Make homemade milk if needed.

  2. Add all ingredients to a sealable glass jar and shake to combine.

  3. Refrigerate for at least one hour before enjoying.

  4. Top with more lime zest, lime wedges and graham crackers. Enjoy!


NOTES

  • Depending on how liquidy you like your overnight oats, feel free to add more or less milk.

  • If you are not making the coconut milk recipe, you may want to increase the maple syrup.
