LEFTOVER FRIED RICE

One of my favorite things to do is make too much rice.

Because leftover rice means fried rice!

& fried rice is one of my favorite quick and easy meals to make.

Also, the combination of flavors feel like a warm hug.


Have you ever tried it with a sunny side egg on top?

Really, it's the only way to serve it.

The runny yolk cascading down the rice creates the best flavor experience.


I mean, look at that. How can you not want to take a bite?!

INGREDIENTS

  • 1 tablespoon olive oil

  • 1/4 cup onion, diced

  • 1/4 cup carrot, shredded

  • 1/4 cup edamame (or peas)

  • 2 garlic cloves, minced

  • 1 thumb of ginger, minced

  • salt and pepper to taste

  • 1 tablespoon butter (or avocado oil)

  • 4 eggs (2 for fried rice mix and 2 for topping)

  • 2 cups cooked and then refrigerated rice (I like basmati)

  • 1 tablespoon tamari (or soy sauce)

  • 1 tablespoon coconut aminos

  • 1 teaspoon sesame oil

  • optional toppings : smoked Maldon sea salt, sesame seeds, cilantro


DIRECTIONS

  1. Prep work : Dice the onion, peel and shred the carrot, mince the ginger and garlic.

  2. In a large fry pan, on medium-low heat, sauté the onions in olive oil for about two minutes. Add the carrot and edamame. Cook for another two minutes. Next add the garlic, ginger and s&p. Sauté for 30 seconds. Slide to one side of the pan.

  3. On the open side of the pan, add the butter. Let it melt a little and then add 2 eggs. Scramble in the pan. Once cooked, combine with the veggies.

  4. Add the rice to the pan and mix until fully incorporated.

  5. Add the tamari, coconut aminos and sesame oil. Sauté on simmer to warm through (about 5 ).

  6. Fry the eggs sunny side up and serve over the rice. Enjoy!


NOTES

  • This recipe will make two servings.

  • I love storing my ginger in the freezer because it make is so easy to microplane.

  • Feel free to switch up the veggies. I always use whatever I have leftover in the fridge.

  • This is leftover fried rice for a reason. Make sure your rice has spent some time in the refrigerator as it always turns out so much better.
