As you know if you've been following for awhile now, Keith is a big snack guy.
Big snack guy.
& i'm always trying to find ways to mix it up for him.
I make this Oatmeal Raisin Granola about twice a month and it's one of his favorite breakfasts ever because it's like eating cookies for breakfast.
So I got to thinking, let's make them into energy bites!
Grab and go.
Carbs, fiber, fats and protein. All your bases are covered in this recipe to keep you fueled as you head out the door for your next chore.

INGREDIENTS
1/2 cup natural almond butter
1/4 cup honey
1/2 teaspoon vanilla bean paste
1 cup oats
1/4 cup Vital Proteins unflavored collagen powder
2 tablespoons chia seeds
1/2 teaspoon ground cinnamon
pinch of salt
1/4 cup raisins
DIRECTIONS
In a large mixing bowl, add all ingredients. Stir to combine
Using a small cookie scoop, scoop the ingredients evenly and roll into a ball. Set on parchment paper and finish rolling the rest of the balls (should make 12).
Store in refrigerator in an airtight container.
NOTES
Make sure you are using a natural almond butter. The consistency of the nut butter is important for this recipe and natural butters are much creamier/runny.
All natural nut butters vary slightly in brand and batch so if the batter is too sticky to roll, add 1 tablespoon almond flour or oat four at a time until you achieve the desired consistency.
