Unleash your tastebuds, folks! You can't beat these. The combination of oat, pumpkin and chocolate is divine.
The oats make the bars dense, the pumpkin keeps them ultra moist for days and the chocolate does what chocolate does. Makes everything better.
INGREDIENTS
3 cups oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 nutmeg
pinch of cloves
1 cup canned pumpkin
1/4 cup brown sugar
1/4 cup maple syrup
2 teaspoons vanilla
1/4 cup applesauce
1/3 cup dairy free chocolate chips
DIRECTIONS
1. Blitz the 3 cups oats in a food processor or high powered blender to make oat flour. It will make about
2.5 cups of flour.
2. Add the dry ingredients to a bowl; oat flour, baking powder, baking soda, salt, cinnamon, nutmeg &
cloves. Mix it up.
3. Add wet ingredients to a large bowl; canned pumpkin, brown sugar, maple syrup, vanilla & applesauce.
Mix it up.
4. Add the dry ingredients to the wet in thirds and mix until just combined. She will look clumpy.
5. Fold in chocolate chips.
6. Add to a greased 8x8 pan and bake at 350 degrees F for 20-25 minutes.
7. Cool and Enjoy!
NOTES
- You can replace the brown sugar with coconut sugar and get the same beautiful rich taste.
