Hi there folks,

Starting something new here on the blog.

I often get requests to make "easier" dishes.

So, I'm going to start a section on the blog for leftovers.

Meals you can make out of something you cooked the night before.

I know so many of you don't like leftovers so these recipes will be a nice way to spice it up and not get bored.

While I believe 90% of my recipes a super easy to make (most take 30 minutes or less to prep) I totally understand the want for quicker conveniences.

So, here is the first recipe.


This could not be easier.

I hope you made spaghetti last night! 😉

In our house, there is always an abundance of pasta sauce. & nobody likes reheated spaghetti or having to throw some on the stove again.

Which is how the spaghetti toastie came about.

I can't even tell you how long I've been eating these as a leftover option.

  • Leftover pasta sauce (~1/2 cup per piece of toast - bolognese is my favorite for this!)

  • 2 pieces of bread (the crustier the better - I love sourdough!)

  • Parmesan and/or mozzarella (to your liking of course, I just don't use much. 😉)

  • Basil and or parsley for garnish

  • Garlic salt (just a sprinkle!)


  1. Pre toast your bread. Make sure it is rather crunchy before adding the sauce so it doesn't make the bread soggy.

  2. If your pasta sauce is cold, nuke it in the microwave for a minute to warm through quickly.

  3. Remove from toaster, add your leftover sauce and toast again to melt the cheese and further warm the sauce.

  4. Top with garlic salt, basil and/or parsley and another pinch of cheese.

  5. Serve immediately and enjoy!

Hope you find this recipe helpful and forgo the crunchy dried out leftover pasta!
