For many years mine was Mexican.

When I refer to Mexican food, I'm referring to actual Mexican food. Not this Americanized crud we have created drenched in queso. I'm talking fresh fish, steamed veggies, rice, fresh homemade tortillas, fresh pico and guacamole, fajitas. You know...the good stuff!

& while I still believe that to be the cuisine I can eat daily and not get sick of, Thai food is my favorite.

The flavors. Oh my god, the flavors.


This recipe is such a great one for changing up your normal ground beef recipes because plain ole ground beef is so boring.

I love serving this on lettuce wraps but it is excellent served over rice too.

& if Keith is heating it up for lunch the next day, he loves eating it like nachos with a good corn chip. What can I say...we have a little Mexico in our blood. 😉

If I'm eating it as leftovers I'm usually just eating it as is with a fork. You can't go wrong.


Honestly, this recipe is so versatile and such a crowd pleaser.

You can serve it as appetizers over lettuce or wow your pals with dinner and serve it over rice.

You can't go wrong. Especially because it is so easy!

INGREDIENTS

  • 2 # ground beef

  • 1/2 onion, sliced

  • 1 bell pepper, sliced

  • 1/2 cup tamari

  • 1 tablespoon sesame oil

  • 1 lime, juiced - I love zesting the citrus skin too

  • 1 tablespoon harissa

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • salt and pepper to taste

  • 1 tablespoon arrowroot powder

  • 1 cup fresh basil, chopped (cilantro, parsley or mint work well here too)

  • sesame seeds for garnish, optional

  • butter lettuce for serving


DIRECTIONS

  1. In a large pan, cook the ground beef until slightly pink. While the ground beef is cooking, slice the onions and peppers.

  2. Add the onions and peppers to the pan and cook for an additional 5 minutes.

  3. While cooking, prepare the sauce. In a mixing bowl combine: tamari, sesame oil, lime, harissa, garlic, ginger, s&p. Mix thoroughly. Pour over the ground beef and pepper mixture.

  4. Let simmer for a couple minutes and then create a well in the middle and add the arrowroot powder to the liquid. Using a fork, combine until thickened. Once thickened, incorporate into the rest of the meat and pepper combo.

  5. Let simmer for 5 minutes so all the flavors combine and the sauce thickens.

  6. Stir in basil or herb of choice, serve over lettuce and ENJOY!!


NOTES

  • Any color pepper works great, I had a few on hand so I used them.

  • Feel free to replace the arrowroot powder with cornstarch.

  • This recipe is great with ground pork and chicken also! Don't be afraid to switch it up!
