Good day there pals and gals!
Hope it's a good one for you.
Snacks.
Ya like em?
I sure do.
I am always scouring the internet and my brain for easy + healthy snack options to have around the house.
These were trending hard over the summer and after my first attempt at making them it was just too much chocolate for me. Most recipes were fully dipped in chocolate.
So, I adjusted to 'spilling' the chocolate over the yogurt bites and it turned out perfect.
Also, they are so easy to make and are stored in the freezer so they keep really well.
Look at them! 👀

INGREDIENTS
10 ounces yogurt, I love using Culina coconut based yogurt in the flavor bourbon vanilla
1 quart fresh strawberries +, diced
3 ounces chocolate, I love Chocolove or Hu Kitchen
1 teaspoon coconut oil
DIRECTIONS
Line a baking sheet with parchment paper. Chop the strawberries into small chunks.
In a large bowl, add the yogut and strawberries and mix until well combined.
Using a cookie scoop, scoop the mixture onto the parchment lined baking sheet. Freeze for one hour.
Combine chocolate and coconut oil and microwave in 30 second increments until melted.
Using a tablespoon, pour the chocolate over each yogurt bite letting it drip over the sides. Freeze for another 30 minutes.
Enjoy!
NOTES
These are to be kept stored in the freezer and will keep for one month before forming icy crystals.
Remove from freezer about 15 minutes before eating. Or eat frozen!
If you prefer to fully dip the yogurt bite in the chocolate, you go for it.
A layer of peanut butter under the chocolate is never a bad idea.
Hope you all are having a happy day!
