PEANUT BUTTER CHOCOLATE CHUNK SINGLE SERVE COOKIE

Today we are talking single serve cookies.

& this one happens to be gluten, dairy and refined sugar free. + plant based if you're into that.

Hopefully that didn't scare you, because its delicious!


So, I live with Cookie Monster.

You know, the Sesame Street character who shoves cookie after cookie in his mouth?!

Yeah, that's Keith.

So I'm always trying to create a somewhat healthy cookie recipe.

We love a recipe for single serve cookies or freezer stable dough here because if I make a whole batch of cookies, Keith will eat the whole batch in one day.

Okay...maybe two.

Anyway, this recipe uses almond flour and peanut butter for the base (which can be substituted for any other nut butter) and maple syrup for the sweetener.

Big win!

Plus it only takes 8 minute sin the oven and it's pretty big so it's like getting to eat two cookies!

INGREDIENTS

  • 1/2 cup almond flour

  • 1 teaspoon ground flax

  • 1/2 teaspoon baking soda

  • pinch of salt

  • 2 heaping tablespoons natural, runny peanut butter (can sub any nut butter)

  • 1 tablespoon maple syrup

  • 2 tablespoons chocolate chips

  • Flaky salt for topping


DIRECTIONS

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.

  2. In a small bowl, combine almond flour, flax, baking soda and salt.

  3. Add the peanut butter and maple syrup. Using he back of a fork or spoon mix until incorporated. This takes a little elbow grease. You will get there.

  4. Add the chocolate chips and mix throughout.

  5. Using your hands, shape the cookie.

  6. Bake for 8 minutes, sprinkle with flaky sea salt and enjoy while warm!
